The Gluten-Free Diet

The gluten-free diet – the only current treatment for celiac disease — will be discussed in detail. This video will also address selecting gluten-free food products, reading food labels, and preventing gluten cross-contact.

Learning Objectives: Participants will be able to:

  1. Name the 3 primary grains that contain gluten.
  2. Explain the reason for concern about cross-contact of gluten in foods.
  3. Identify gluten-free and gluten-containing food products.
